This healthy, fast and easy to make mojarcan chicken recipe makes great main course for a family meal or dinner party. This recipe serves 4.

Main cooking utensils: Saucepan, casserole
Oven Temperature: moderate - 325 - 350°f/170 - 180°c Gas mark 3-4
Oven position: Centre
For 4 portions you need:
4 portions young chicken
seasoning
1 ½ oz/ 40g flour
2oz/50g margarine or chicken fat
¾ pint/425ml bottled apple
juice or ½ pint/275ml chicken
stock and ¼ pint/150ml apple juice
1 lemon
2 dessert apples
2 oranges
1 green pepper
8 small tomatoes
1. If using frozen chicken allow to defrost, pat dry on paper.
2. Coat the chicken in half the seasoned flour and fry in the hot margarine or fat until golden brown.
3. Lift out of the pan, put into the casserole.
4. Blend the rest of the flour with the apple juice or stock and apple juice, pour into the pan and cook until thickened.
5. Add lemon juice to taste and season well.
6. Pour over the chicken, add the cored, sliced dessert apples, rings of orange (do not remove peel) and diced green pepper (discard core and seeds).
7. Cover the casserole, cook in a moderate oven for nearly 1 hour then add the tomatoes and heat for a further 5 - 10 minutes.
To Serve: With new potatoes and peas.
