10 oz fresh crabmeat
1 1/2 c fresh white bread crumbs
1/4 c chopped green onions
1/4 c low-fat mayonnaise
1 tbsp spicy brown mustard
1 egg white, beaten
2 tsp olive oil
This recipe makes 8 servings and can be enjoyed by diabetics everywhere due to its trace amount of sugar.
1. Preheat oven to 200 degrees.
2. Mix crabmeat, 3/4 cup of crumbs and green onions. Add 1/4 cup of mayonnaise, 1 tbsp of mustard and egg white.
3. Shape mixture into 8 1/2 inch thick cakes. Roll lightly in remaining 3/4 cup of crumbs.
4. Heat large skillet over medium heat until hot.
5. Add 1 tsp of oil. Add cakes and cook 4-5 minutes per side until golden brown.
6. Place crabcakes on tray when cooked and keep them in the oven until all cakes are cooked.
7. Serve immediately.
