Serves 4
INGREDIENTS:
4 tbsp. butter, melted
1 cup lemon balm, shredded
1 tbsp. olive oil
1 clove garlic, crushed
1 tsp. salt
1 tsp. black pepper
1 lb. steamed broccoli
1 cup cashews
METHOD:
Fry lemon balm in butter for 3 minutes. Remove with a slotted spoon.
Add garlic and cook for 2 minutes until just softened. Put garlic, lemon balm, olive oil, salt, black pepper and cashews in another pan. Heat gently for 4 minutes until hot.
Put broccoli on a serving dish and drizzle cashew mixture over the top. Serve hot on rice or noodles, or as a side dish for roasted meat.
